Almond Burfi | by Uma Iyer

 

 

Almond burfi is a popular Indian sweet made with the goodness of almonds, decorated with roasted almonds and pistachios. This simple recipe is quick to make and is one of my absolute favourites.

Ingredients:

  • 2 cups full cream milk powder
  • 300 ml Pure cream
  • 1 can Nestle condensed milk (395 g)
  • 1 tsp cardamom powder
  • 1/2 cup almond meal
  • Roasted almonds, crushed pistachios, saffron (optional) & edible silver foil (optional)

Preparation:

  • Mix the above ingredients together in a large microwave safe bowl and cook in 2-minute bursts in the microwave for 10 minutes. Add a few saffron strands (optional) at this stage and continue cooking for a further 2 minutes in 10-20 second bursts until it leaves ghee from the side (total cooking time should not exceed 12-14 minutes).
  • Set in a greased plate and cut into squares. Garnish with crushed roasted almonds, crushed pistachios and edible silver foil (optional) for a perfect, professional finish!
